Bangor, Maine, moves forward with shared commercial kitchen plans [Video]

BANGOR, Maine — Owner and operator of “Dreamer” food truck Anik Derphalibossian spends her summers parked around Greater Bangor, but during the winter she relies on a smaller kitchen space to help create her Lebanese-inspired foods.

“It’s a tight space,” Derphalibossian said. “I have to make it simple enough to just have everything ready.”

But there’s a plan underway in Bangor that would be designed to help make her small food business and others like it easier to operate and even grow.

City officials are working with architect Paul Lewandowski, who designed the Fork Food Lab in South Portland, to create the facility.

“There are freezers and coolers and then there’s a central washing area, and a place for storage,” Lewandowski explained.

Lewandowski said Bangor’s shared kitchen will include much of the same layout and equipment, but the building will be completely prefabricated …
