RAPID CITY, S.D. (KOTA)- Pistachio Pie Bakery has been in Rapid City for 7 years; however, it has been under new ownership for the past 3 years.

It all started when Nickie Steinback’s daughter received her pastry diploma and started an internship at the bakery.

“She worked here for about a year-and-half when Lauren decided she was done having her own business and decided to sell it. So, my husband, daughter and I formed an LLC and purchased it,” Nickie Steinback, co-owner/ bakery manager of Pistachio Pie Bakery said.

Steinback also has a history of baking.

“I was a home baker. I grew up baking with my mom from at least 5 years old,” Steinback said.

One of Steinback’s family recipes is still being served in the bakery today.

“Our lemon meringue pie now is based on my mom’s recipe,” Steinback said.

Although it’s named Pistachio Pie Bakery, they sell more than just pies.
